Something hot for the dance floor...


Swing dancers need lots of high energy foods to refuel during a long dancing evening.  These brownies are the perfect answer.   The dark chocolate and chilli kick you back onto the dance floor, a sugar boost for those tired feet, they'll keep you going til dawn or until the music stops.


Spicy Chocolate Brownies
Makes 1 Tray (about 12- 16)

140g dark chocolate (70%)
450g dark brown sugar
225g butter, salted
110g flour
5 eggs
55g cocoa powder
7-8 cardamom pods
½ teaspoon chilli powder
¼ teaspoon ground ginger
fresh nutmeg, ¼ teaspoon

Oven to 190°C.
Grease and line a tin (30x25x4) with baking parchment. 

Remove the seeds from the cardamom pods, grind finely in a pestle and mortar.
Melt the chocolate in a bowl over barely simmering water (so it won’t burn), add the ground cardamom, chilli, ginger & nutmeg.

Melt the sugar and butter separately then add the spicy melted chocolate.
Whisk the eggs, combining well. Sieve the flour and cocoa together and add to the chocolate mix alternatively with the eggs.

Pour into the tin and bake for 20 minutes.
Don't overcook them, a skewer will come out clean, just!
Cool in the tin before slicing and serving. I like them in small 4x4cm squares… 
Obviously each person can have two!
